Healthy enough, but neither complete nor appealing, at least to me.
Potatoes, carrots and apples are fine with ham or chicken- proteins that lend themselves well to sweet flavors. But not with fish.
Savory potatoes are fine with fish, carrots are questionable, and apples, absolutely not.
I would serve savory potatoes or rice with fish, and a savory salad or green beans or other green vegetable.
Potatoes are not all that healthy, so you're much better off with a green vegetable with your fish. Stay away from anything sweet with fish- yuck. It tends to ruin both.
