Why do we say yesterday and last year? Not yesterday or last day? Why is it random instead of all using the same terminology?

Are you so young that you never heard "Yesteryear".

Because nobody ever had the sense - or the power - to rationalise English that much.

Surely there will be years after last year, so it won't really be the last one now will it?

"Yesteryear" is still used, but rarely.
