What would happen if I only ate beef jerky for a month?

    You can actually live on just water for a month, so eating jerky would eliminate the starvation issue.

    It has carbs, protein & fat, so no issue there. Just make sure it's an organic and preferably grass-fed jerky since that's the only intake.

    with all that salt you be setting yourself up for heart issues. if not now,latter down the road

    You would be super dehydrated because beef jerky is really salty. You might as well get your protein from somewhere else.

    You would be terribly constipated.

    (Longer than a month, other health problems would start to surface.)
