How to use up overripe bananas?

    I generally throw them out (yuk!) but you can try mashing them into a bowl of cottage cheese, then add some walnuts and eat. I have this "banana bread" substitute often, but with less mushy good ripe banana :)

    Banoffee pie, banana loaf, smoothies, chopped up in oatmeal or bircher oats, mix into plain yogurt, banana bread & butter pudding, stir through ice cream, put into pudding/custard/trifle.

    The most common way to use over-ripe bananas is to make banana bread.

    If I have bananas that are "too far gone" for my taste, I peel them, wrap them in foil or plastic wrap, and freeze them. Then they are ready for my breakfast smoothies.
