How long can I live off of just soybeans and fruit and vegetables fresh only or frozen vegetables and no potatoes either?

    A long time probably, just be sure you are meeting daily macro and micronutrient requirements. Consider supplements where needed.

      I have been watching NHK Japan on cable TV and it is amazing how much soybean they use. {Tofu, miso flavoring for soup stock, etc.} My key point was that soybeans are a very good source of protein for vegetarians (like monks). [And yes, rice is also huge. Rice also goes into making miso paste.]

    Not long, youll have heart disease in a few years. You have to include seeds, nuts beans and what not that are other sources of proteins and amino acids that youre missing from meat.

    Probably a long time. Potatoes were rare in Japan. Their main food starch was (and is) soybeans. Soybeans are full of protein.

      main starch is rice in most Asian countries.
