How do directors film scenes inside moving cars (or at least make it appear as if it were inside a moving vehicle)?

Plus it’s a big safety hazard to be driving around, sometimes at already illegally high speeds, in a vehicle that has people packed like sardines trying to film and recite lines.

So I’m pretty sure they’re not actually driving, but how do films create the illusion they are?
