Fruit salad is my favorite go to breakfast. I buy canned pineapple wedges and mandarin oranges, drain the can and leave them in the fridge in an air tight container. This way, they are ready and cold when I take a big scoop of them and add fresh banana and or blueberries and strawberries. This combo or any variation of which is great in cereal or yogurt. If you like smoothies in the morning, just cut up bananas and use the canned fruit on a single layer of a baking sheet and freeze, then bag the frozen fruit to use as "ice cubes" with milk or juice in the blender.
The key to eating a good breakfast is to have most of the prep work done in advance.
You can also make your favorite oat meal and scoop it into a muffin pan, freeze it, bag it, stored in the freezer. Just take one out, pop it in the microwave and you have yourself a healthy breakfast in no time flat. Add walnuts or raisins or cranberries to the oat meal with some cinnamon and you are good to go.
You can spray a muffin pan with oil, add thin slices of potatoes lining the muffin pan, then add an uncooked scrambled egg with any veggies of your choice and maybe some cheese or perhaps cooked sausage or bacon. This can be made in advance the night before and refrigerated. Bake at 325 for 20+ minutes and enjoy. If you do not fill the whole muffin pan, you can put water in the empty muffin spots while baking.
A peanut butter and banana sandwich on toasted bread is so delicious. So is peanutbutter and apple sandwiches.
Sometimes I have a scoop of yogurt, a scoop of jello and fresh fruit in a bowl for a refreshing breakfast.
If you have shredded coconut on hand in the fridge, that is always great to sprinkle on yogurt, cottage cheese, fruit salads and cereals.
If you take a medium size red potato and use an apple corer to cut a hole through it, you can stuff it with a sausage link and cook it when you are baking other things in the oven. They are easily reheatable in the microwave for breakfast or with your eggs.
If all else fails, that cold pizza from last night will do! LOL
