Look for a recipe for a Chocolate Babka that will give you the best version.
I found this on King Arthur Flour web site. I have never had a bad recipe from this site.
1 1/2 Cup chocolate chips
1 Cup milk
1 large egg
1/4 Cup butter
1 1/4 tsp salt
1/4 Cup sugar
2 tsp vanilla extract
1/4 tsp almond extract
3 3/4 Cups all purpose flour
2 1/2 t yeast
3 Tb sugar
1 tsp vanilla extract
2 tsp water
Process chocolate chips until coarsely chopped set aside
In large bowl combine all dough ingredients except chocolate chips.
Mix until you have a smooth dough.
Cover and let rise until double about 1 to 2 hours.
Lightly grease a 9 inch cake pan, line with parchment and then grease the parchment.
Deflate the dough, knead the chocolate chips into the dough.
Shape into a flat disc, place in pan and press the dough to the edges of the pan.
Cover lightly with a lightly greased piece of plastic wrap. Let rise until dough just crests over the top of the pan, about 1 1/4 to 2 1/2 hours.
While bread is rising heat oven to 350 and make the topping
Combine topping ingredients.
When dough has risen stir the topping mixture and drizzle over the top of the dough.
Bake for 20 minutes then tent the bread with a piece of foil. Bake another 30 to 35 minutes.
Bread will be a deep brown, internal temp should be 190 degrees F.
Remove from oven, after 5 minutes run a knife around edge of pan, loosen bread from pan then remove bread from the pan and cool on wire rack.
Allow to cool completely before you cut it
After writing out the recipe I though wow that sounds good so I made it I was putting the pan into the oven at 11:00 last night. All I can say is..WOW it is good. And pretty easy to put together.
