I make this fantastic dish that's a bit different that works really well with spaghetti and is easy and quick to make. Coincidentally, I made it last night.
Lightly dry fry some pine nuts and once their going start boiling your spag.
Whilst the nuts and spag are cooking finely chop a big handful each of fresh basil, mint and chives (I usually use a whole plant of each for this dish to serve 4).
Just before the spag is done (4 mins from cooked) add in a load of frozen peas. Once the spag is done and the peas are hot, drain, then add about 200g of mascarpone and mix in well, then add the herbs and the pine nuts.
Then you can add diced chili if you want at this point.
Then serve with a few lemons for juice and some parmesan to top it with.
It's really quick and easy, fresh, tasty and not really that bad for you. It could be serve with a salad as well if you like.
