Roast vegetables with brown rice. Chop up veg. Mix in olive oil, maybe some garlic and herbs. Roast in the oven. Boil rice. Mix it all together.
Vegetable stir fried in garlic and ginger served with coconut milk and noodles.
Fry onions, garlic, chilli if you want spicy, maybe mushrooms, courgettes, peppers, added a tin of tomatoes. Stir in cooked pasta.
Any of the above are easy and cheap and you can make extra for the next day. The roast vegetables can be blended as soup. Make loads and freeze it so it's a quick meal another night.

Make a big batch of bean chilli and freeze it. Serve it with rice, pasta or jacket potato.
