When people claim that [X culture's} food is bad, they're not talking about the quality of the food, they're talking about local staples and how it's prepared.
Take pizza for example. Theirs thin crust, thick crust, very saucy, very meaty, deep-dish, herby, garlicky, chewy and crunchy verities. Some places fold pizza over and call it a panzarotti. If someone says I hate New York's pizzas they're not saying that the cheese tastes funny or the toppings where wilty, they're saying that they don't like the style, texture, or the combination of ingredients.
