To make something approaching what they do in India, fry some chopped onions and an apple or two in oil, add your spices (cumin, coriander, turmeric, etc. - look up a good spice mix), and fry gently for another couple of minutes. Add some water or stock, maybe apple juice, creamed coconut, apricot jam, chutney, maybe ground almonds, maybe yogurt, maybe any nuts you like. Now you have your curry sauce. You don't necessarily have to add all those things, but use most of them. Don't dream of using a can of soup!
