are there prisons for both men & women (together)?
on law & order/svu they always send the criminal man or woman to riker's island or sing sing...

No. As you might guess, it would be too dangerous for the women.
Sing Sing is an all-male maximum-security prison. The only females there are prison workers.
Riker's Island is not a single jail, It's an island in which there are 10 individual jail facilities. One of those jails is for females (adolescents and adults). Most people use the generic term Riker's Island for sake of simplicity, but in reality suspects are sent to a specific jail facility withing the island.
Also Riker's Island is not a prison, is a jail complex for suspects (not convicted yet) awaiting trial because were unable to make bail, and for those convicted serving short sentences (less than a year.) That's why in the Law & Order/SUV all suspects are sent there before the trial.

The same prison could include separate buildings for men and women, all under the same administration. There would likely be zero interaction between the two groups.

No even then, the sexes are segregated by sex in a jail or prison. When I was at LMDC, the GED classes were coed, until the inmates were caught passing notes to another. The GED classes are now single sex only.
