Vegan/Vegetarian Section: What is your favourite dish?

Looking for some more ideas for my families "vegetarian" night coming up. What are some of your own personal favourites?

    I like to layer zucchini, squash, spaghetti sauce and cheese in a small casserole dish and bake.

    Veggie lasagna.

    Veggie tacos are always a good option, everyone can make their own. Grill various veggies and serve it up buffet style.

    Make a veggie soup & cornbread.

    Chili with portobello mushrooms.

    Spaghetti with a garden veggie sauce and portobello mushrooms as a substitute for ground beef. You can even use veggies for the noodles, just use a spiralizer or:

    Baked potatoes with broccoli & cheese.

    Veggie gumbo.

    My favorite vegan dishes include fruit- especially strawberry- pie, veggie filled burritos, or grilled cheese using Daiya cheddar slices. But my all time favorite has to be french toast.

    To make vegan french toast, use bread with no egg or milk. Soak 4-5 thick slices in a mixture of non dairy milk (soy, almond, etc.), 1/2 tbsp agave nectar or maple syrup, 1/2 tsp cinnamon, 1/2 tsp vanilla extract, and 1 tbsp corn starch. It is heaven.
