Going for a beach picnic. Young girl is a vegetarian and can't eat nuts. While everyone else dines on lobster rolls, what kind of sandwich?

can I make for her that will be tasty and not toooo much work to put together. And of course, we will have plenty of other things that she can eat.

    Depends some on her taste buds. Does she like sweet, spicy, tart, tangy, hot? One of the best I have eaten was simply on a whole-grain-nut bread with a wonderfully sweet tomato and thick slices of just-ripe avocado.

    Some of these will be wetter, so pat them dry and maybe assemble the sandwich there.

    Neutral fresh:


    Cucumbers, you can deseed them. I don't.

    Bean sprouts, a little earthy

    Alpha sprouts

    Fresh spinach

    Romaine lettuce


    Red bell peppers, orange & yellow add variety

    Sweet carrots, shredded or Julienne to go with longer sprouts

    A good tomato

    Sweet relish or pickles, bread & butter chips

    Roasted red peppers are oily but some like them on sandwiches


    Dill pickles/relish

    Sauerkraut...on the side, patted dry

    Coleslaw is both a side and good to add on a sandwich when about to eat it.

    Mustard, Dijon is milder, Brown mustards tend to be more organic and hotter

    Husain sauce, an Asian BBQ sauce

    Tart: tomatillos (like a green tomato)

    Milder heat:

    Sweet white onion

    Green bell pepper

    Anaheim/Verde pepper

    Creole/Hungarian/Bird Cherry pepper



    Fresh, thin sliced jalapeno

    Hot sauce, Red Hot

    Horseradish, could be in a white sauce, or Chinese mustard

    Good sides:

    Broccoli & cauliflower salad

    Waldorf salad


    A sweet corn medley

    Fruit medley: pineapple, blueberries, strawberries

    You didn't say vegan, so cheeses to cover a range:





    White sharp cheddar

    Here is a pasta sauce all your guests may enjoy...

    Red sauce: dice 7 medium tomatoes (remove seeds for less bitter) & 1 med sweet white onion, mince 1-4 raw garlic cloves, bruise and finely chop 1/2 cup fresh herbs (basil, oregano, rosemary, thyme). More sweet, dice a red bell pepper. More zip, zest and juice 1/2 lemon--becomes alkaline 20 minutes after eating. More spice: fresh ground black pepper, mince a jalapeno. More calories: 1/2 an avocado, or 1/4 cup powdered-blended raw almonds. Optional 1/2 tsp seasalt. Zucchini and summer squash can be julienned for the noodles.

    Turkey, Honey Mustard and put it on a Hawaiin Roll. Easy to make but not sure what she likes.

    So Really, I would ask her.
