Toffee or Taffy? I'm confused?
Are they just different spellings or are they different things?

At its most basic, taffy is sugar water and corn syrup. maybe some salt. There are other variations to the recipe.
Taffey is cooked to nearly the same temperature but then allowed to cool somewhat and pulled by hand which changes its texture and color.
Google "homemade pulled taffy and tons of recipes a youtube tutorials will pop up.
Toffee has different ingredients, more of a butterscotch, caramel flavor, is cooked somewhat longer, poured onto a flat surface and sometimes covered with a thin chocolate layer, cooled over night or several hours and broken into peices.

They are two different things. Taffy is similar to Toffee though.
