Is it possible for rats to have two litters back to back without contact to the male?

If your rat delivered over a few days, it simply means there is a serious complication that caused a delay in the delivery process. Most rats and babies would die in this case. If the rat had one litter, then went through a gestation period and had another, it means there WAS a male able to access her at some point after the first litter.
You need semen for a pregnancy to occur, so no, there would be no litter without contact with a male. However rats are physically capable of back-to-back litters (which also have a higher fatality rate...)
