healthy meal option....?

At Chipotle, a burrito bowl with only chicken, lettuce, cheese and brown rice. Is that pretty healthy for a dinner, since it does not have all the extras (tortilla, fatty extras). Online it said a burrito bowl with those ingredients is 465 calories. Is this decent for a dinner like once a week, if i am working out everyday?

Yes it sounds healthy enough - you might want to add more veggies if possible, or have some more veg or some fruit at the side. I don't know how they cook their chicken at Chipotle but ask for it to be grilled if it's not already.

If you're working out every day you need to eat more to compensate for the calories you've burned, even if you're trying to lose weight. E.g. if you eat 1200 cals a day, but also burned 300 with exercise, you should actually eat 1500. Eating too little is one of the major things that stops people losing weight, believe it or not.
