It's fine. Whatever you do, though, don't get any of the vegetarian hot dogs because they're dreadful.
Could have some big stainless steel bowls (inexpensive) full of salads, such as bean salad, pasta salad, green salad, & potato salad (use soy mayo so it won't spoil so easily & no boiled eggs in it), along with hummus dip trays, tortilla chips, baby carrots, sweet yellow peppers, & black olives + some crackers & cheese + baked beans. Maybe have some sourdough bread or another good bread for those who aren't eating hot dogs, plus those hot dog trimmings that you mentioned.
Another answerer is right. At one time, wedding receptions were simply cake, maybe bakery cookies, & non-alcoholic punch. So, yours will be a step up from that.
Mineral water, plain & flavored, are both very nice btw.
Also, you may be able to hire some h.s. or college students at a low hourly rate to assist, so people in your family won't be stuck with such divided attention.
At worst, you would be at the reception table handing out these hot dogs, & I'm sure you wouldn't want that.
