If you jailbreak your ps3, does it lose all its data and save data?

i want to jailbreak it, but i have a lot of things on my pes 2010 game that i would not like to have messed up. my father once said that he could take it to turkey to get cheap games, but it would lose all of its data. and if i does NOT lose its data, how can i jailbreak it? and is there a way to back up the saved files on the ps3 on an external HDD?
