What is the difference between a spirit and a soul?
I have trouble with this concept for some reason.

The soul and the spirit are the two primary immaterial aspects that Scripture ascribes to humanity. It can be confusing to attempt to discern the precise differences between the two. The word “spirit” refers only to the immaterial facet of humanity. Human beings have a spirit, but we are not spirits. However, in Scripture, only believers are said to be spiritually alive (1 Corinthians 2:11; Hebrews 4:12; James 2:26), while unbelievers are spiritually dead (Ephesians 2:1-5; Colossians 2:13). In Paul's writing, the spiritual was pivotal to the life of the believer (1 Corinthians 2:14; 3:1; Ephesians 1:3; 5:19; Colossians 1:9; 3:16). The spirit is the element in humanity which gives us the ability to have an intimate relationship with God. Whenever the word “spirit” is used, it refers to the immaterial part of humanity that “connects” with God, who Himself is spirit (John 4:24).
The word “soul” can refer to both the immaterial and material aspects of humanity. Unlike human beings having a spirit, human beings are souls. In its most basic sense, the word “soul” means “life.” However, beyond this essential meaning, the Bible speaks of the soul in many contexts. One of these is humanity’s eagerness to sin (Luke 12:26). Humanity is naturally evil, and our souls are tainted as a result. The life principle of the soul is removed at the time of physical death (Genesis 35:18; Jeremiah 15:2). The soul, as with the spirit, is the center of many spiritual and emotional experiences (Job 30:25; Psalm 43:5; Jeremiah 13:17). Whenever the word “soul” is used, it can refer to the whole person, whether alive or in the afterlife.
The soul and the spirit are connected, but separable (Hebrews 4:12). The soul is the essence of humanity’s being; it is who we are. The spirit is the aspect of humanity that connects with God.

Angels are spirits they are incomplete souls and demons are fallen angels in fact the word demon comes from the Greek word "daimon" which means "spirit" over time the word demon became attributed to unclean spirits and fallen angels in which in Christianity a demon is a malevolent spirit. And yes the angels were created from the breath of life from God in which they came into existence.
The soul is the unity of body & spirit together in which plants, animals, and man have souls because our bodies were created from the earth and our spirits came from the breath of life from God. But man is different from the plants and animals for man was created in the Image of God therefore man is an eternal being while plants and animals were created by God for man in which they are not eternal beings once they die that is the end of their existence. But because man is an eternal being when the body dies the spirit continues to exist in a spiritual realm or state of existence in which one day the spirit will be reunited with the body what will be made uncorrupted during the resurrection of the dead. Now it's believed that in Heaven there are many halls and in one of these halls are the souls of the unborn, the reason why they are called souls is because they are predestined to have bodies as the host of these spirits. Which is why even in death the spirit of a man is called a soul because one day that spirit will have a body again.

A person is a soul, they don't have a soul. A spirit is an entity such as an angel or demon, with no physical body.
Then there is the holy spirit which is God's active force and not a part of a Trinity as some claim, The Bible does sometimes use figures of speech to make it sound like it is a person. But it also uses many personifications. A couple examples are "Wisdom keeps crying aloud in the streets" and "death ruled as king."

I hope the following information I have provided is useful:
Man is a triune creature: The threefold nature of man is: Body, Soul and Spirit.
The ‘Body’ (physical) which consists of five senses of: Sight, Smell, Hearing, Taste, and Touch.
The ‘Soul’ consists of: Imagination, Conscience, Memory, Reason, and Affections.
The “Spirit” receives impressions of outward and material things through the soul. The spiritual faculties of the Spirit are: Faith, Hope, Reverence, Prayer and Worship.

Spirit is given by God so our spirit can communicate with His Spirit. Soul is our being, mind, consciousness that either follows God or follows the devil. The way of man is the same as following the devil. There is a way of man and a way of God. The soul makes heaven or hell as we choose.
I always want my soul following my Spirit because the Holy Spirit dwells in me.

the soul is the sum total of a person's physical and spiritual being
soul = body + spirit

your spirit is your non physical you, subconscious. Your soul is the containment of all your sins and good deeds (karmic debts) which we have to fulfil to get to everlasting life. That is why the devil wants your soul as he will control you for eternity as you can never pay you sins and gain everlasting life.

Your soul is you (your faith, thoughts, and personality)
A spirit is like a ghost but not...kinda like a Holy ghost as God puts it in the Bible.

The Spirit of a man is the candle of the lord aka Jesus Sr. or God with a big G the soul and body is us and can be destroyed in the Lake of Fire
