I have lived my whole life as a pescatarian (that's the word for someone who eats no meat except fish) and it really doesn't limit my food at all. I'm an amateur chef, here's of my best recipes.
Grilled fish on Polenta
1 cup grits
1 cup green vegetables (broccoli, brussel sprouts)
2 medium fish filets
1/4 cup grated parmesan
1/2 cup grated cheddar
1/4 cup cream
butter, cumin, red pepper, lemon juice to taste
Bring two cups of water to a boil, and add grits. Cook on low until no water is visible, turn off and let sit.
Put green vegetables on to steam for 10-15 minutes, or until deep green and tender.
Heat skillet to medium, and add about a tablespoon of butter. Saute the fish, turning occasionally and dusting with salt, spices, and lemon juice. Cook until outside starts to burn.
Heat cream in saucepan until it starts to boil. Turn down heat, and stir in salt, parmesan.
Returning to the polenta, stir in cheddar while still hot. Spread on the plate, and top with fish and greens. Cover with cheese sauce and enjoy.
