The exact breed/type of chicken determines the color of the egg. Different farms use different breeds of chickens.

Depending on the breed of chicken, eggs can be white, brown, blue, green, pink, lavender, or any other hue in between. The Ameraucana breed is known as the "Easter Egg" chicken because it can lay a variety of different colored eggs.
