    • 2 large Onions, chopped

    • 2 stalks Celery, chopped

    • 2 Tomatoes, chopped

    • ¼ cup Butter

    • ½ cup Tomato Juice

    • 2 tbsp Lemon Juice

    • 3-4 Garlic cloves, crushed

    • 1 Bay Leaf

    • Salt & Pepper to taste

    • 1-2 pounds Fish Fillets

    How to make Baked Fish:

    • Melt butter in a pan and fry onions, celery and tomatoes on medium low heat.

    • Add tomato and lemon juice followed by garlic and bay leaf and simmer 2-3 minutes.

    • Place the fillets in a buttered baking dish and sprinkle salt and pepper over them.

    • Pour the prepared sauce and bake at 350 degrees F until fish is opaque.

    • Remove from the oven and serve after few minutes.

    • 1 cup Soy Sauce

    • ¼ cup Sugar

    • ¼ cup Salad Oil

    • 2 tsp Ginger (freshly grated)

    • 1½ lb (700 g) Fish Fillets

    • 1 tbsp Sesame Seeds

    How to make Fish Teriyaki:

    • Mix together soy sauce, sugar, oil, ginger, and garlic in a large bowl.

    • Cut fish fillets into four equal portions and clean properly.

    • Marinate fillets in the prepared mixture for 3 to 4 hours.

    • Place fish on a broiling pan, reserving the marinade.

    • Simmer fish fillets 4-5-inch above the heat for 3-4 minutes, basting with reserved marinade frequently.

    • 3-5 minced Thai Chili Pepper

    • 1 tsp Sugar

    • 2 thinly sliced Shallots

    • 1 Lime

    • 1/3 cup Green Mango

    • 2 tbsp Fish Sauce

    • 1/2 lb Catfish

    • 1/4 cup Cashew (Optional)

    How to make Crispy Catfish Green Mango Salad:

    • Instead of the traditional method, you bake the catfish first and then drain the juices and then fry the whole filet on medium low heat. As you are frying the filet, break it up with your spatula into very small pieces.

    • It takes a few minutes to brown all the pieces to be very crispy. Drain the cooked fish on paper towel.

    • Mince the chili pepper. Mix the minced chili pepper, sugar, fish sauce and lime juice together.

    • Slice the shallot thinly.

    • Peel and grate mango with a large hole grater. In Thailand, as in the pictures, people sliver the mango by first chopping along the length of the mango many many times so that the blade goes just a little below the surface and then cutting the thin pieces away.

    • If your cashews are uncooked, toast them in a pan until golden brown.

    • Mix all ingredients together and serve.

    Fry or bake salmon or cod fish in a tablespoon of oil - I prefer to fry because I know they are done.

    Meanwhile, combine 1/4 cup olive oil, 3/4 cup Panko crumbs, 1 tbsp. minced garlic and a tsp rosemary in a small pot. Cook over medium or high heat on stovetop, stirring frequently, bout five minutes until browned. Turn heat off. Arrange fish on serving plates and spoon the crumbs evenly over the top. Serve with lemon wedges.

    This one is simple and works for all small fish.

    Old bay seasoning

    garlic

    Take the fillets and wet them a little bit. dip them in flour. put oil in a pot. put the heat on and the put some garlic in the bubbling oil to give the oil flavor. put the fish in and cook it until golden brown on both sides.

  • You can bread and fry them in tempura or beer batter.

    Or a very simple one is to just bake it with a little salt and pepper and lemon slices on it.

    BAKED BREADED MONKFISH

    Monkfish tastes somewhat similiar to lobster, but is a lot less expensive. This dish is also healthier than fried fish, but still has a nice crumbly crust. Substitute any other firm white fish if monkfish is not available, ready in 25 Minutes

    PREPARATION METHOD

    1. Preheat oven to 180 C / Gas mark 4.

    2. In a small bowl, combine melted butter, paprika, salt and pepper.

    3. Place the fish fillets on a non-stick or parchment lined baking tray. Brush the fillets evenly with the butter mixture and sprinkle the breadcrumbs over the top of each fillet.

    4. Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.

    BARBECUED MARINATED SWORDFISH

    White wine, lemon juice, garlic and soy sauce flavour this marinade for swordfish steaks cooked on the barbecue, ready in 20 Mins

    INGREDIENTS

    Serves: 4

    4 cloves garlic

    75ml (3 fl oz) white wine

    4 tablespoons lemon juice

    2 tablespoons soy sauce

    2 tablespoons olive oil

    1 tablespoon savoury seasoning, such as Knorr

    1/4 teaspoon salt

    1/8 teaspoon freshly ground black pepper

    4 swordfish steaks

    1 tablespoon chopped fresh parsley, for garnish (optional)

    4 slices lemon, for garnish (optional)

    Preparation method

    Prep: 10 mins | Cook: 10 mins

    1. In a glass baking dish, whisk together the garlic, white wine, lemon juice, soy sauce, olive oil, savoury seasoning, salt and pepper. Place swordfish steaks into the marinade, and refrigerate for 1 hour, turning frequently.

    2. Preheat barbecue for high heat, and lightly oil cooking grate.

    3. Barbecue swordfish steaks for 5 to 6 minutes on each side. Garnish with parsley and lemon wedges.

    1 dessertspoon chopped fresh marjoram

    1/2 teaspoon salt

    1/8 teaspoon ground black pepper

    800g (1 3/4 lb) halibut steaks

    4 sprigs fresh marjoram, for garnish

    PREPARATION METHOD

    Prep: 5 mins | Cook: 20 mins

    1. Mix together grapefruit juice, olive oil, 1 dessertspoon marjoram, salt and pepper in a shallow glass dish. Add fish, turn once to coat both sides, then cover. Refrigerate 1 to 2 hours, turning once or twice.

    2. Preheat barbecue.

    3. Reserve marinade, and place fish in lightly oiled wire basket. Place fish 4 to 6 inches above hot coals. Grill for 10 to 12 minutes, turning once and brushing twice with reserved marinade, until steaks are barely opaque in thickest part. Arrange on a platter, and garnish with sprigs of marjoram.
