Ever had day old leftover red beans & rice folded into an omelet?
Some butterfly shrimp and sausage pieces in there too. Along with some sharp cheddar folded in. Love pot luck omelets, I'll try anything, once. Things like red beans & rice, different bean soups, chilli, or gumbo, etc. all seem to improve their flavour if left to age a bit. (say 24 hours) Why too, is that t?
