How do you plan a backpacking trip?

Pick a destination and use a trail finder lots of people have been there and done that.
Pick a date and acquire the necessary permits and reservations. If in a wilderness area you will need the wilderness permit, you may also need a fire permit. If you plan to hunt or fish you will also need permits for that. Some permits such as the hunting permit require additional fees and training.
Plan your route and make an itinerary of where you will start and be at each day and where you will finish you may need this information for the wilderness permit and you should give this information to a third party not going on the trip. Contact them when you leave and when you get back, any delay will be an assumption something went awry and the third party can get help looking for you.
Plan a menu of what to eat and who is carrying what, divide the load fairly. Have a plan b if somebody changes their mind.
Check all your gear you plan to bring, pack it up, unpack it and check it all again and then do a final pack up use a check list so you don't forget anything.
Check your mode of transportation it's a long haul in and out of the back country and car troubles are not a good thing and you may need a parking permit as well.
The day before you go have a carb loading party eat well and drink lots of fluids (no booze) and hit the sack early so you can hit the trail early.
