Can you make quiche filling ahead of time and refrigerate?
I am making several quiches for dinner and my schedule today is very hectic. Could I make the fillings a few hours earlier and put them in the refrigerator and then later, put them in the pie shells to bake? I don't know if that would affect the egg mix. Thank you.

I love quiche but have never tried refrigerating the custard. Honestly - it really takes so little time to whip up the eggs and milk/cream. You spend more time constructing your quiche than you do making your custard. What you can do is chop your vegetables and prepare your protein bacon, ham sausage ahead of time. Take them out of the frig before you start on your custard so they get to room temperature. Cheat and use pre-made frozen pie shells.
