I actually know that kind of workshop. But they never rely so much on the gallery and selling the art works, unles they are really good. Which i doubt since they all would be rookies.
A day care is also another reachable idea. But it'll take a lot of money to start, if you can convince people to help fund you, you'll be good.
I have another idea for you. Why not quit your job, start building your dreams. You should be non-profit, but it doesn't mean that you don't get paid. They pay you to operate, to give you a little gross profit to pay salaries of your staff and you, but end up with no net income or just a hundred per month for savings. Just don't pay yourself too much. I know one couple who do that, but they just focus on daycare and pre-school.
