At least try to understand evolution before you make an argument like this. As an agnostic (like an atheist, but less ignorant) I try to understand a religion before I argue against it. I have read the Bible and am currently reading the Koran. Unless there is evidence that directly disproves something, you cannot believably prove it is not true.
To answer your question, you don't see it happening because it took us about 6 million years to evolve from monkeys into humans. Evolution isn't a fast process, it takes a LOT of time for one being to evolve into another being which looks extremely different. We know this because there are 6 million years worth of evidence of human evolution in the form of fossils. We have physical proof that evolution occurred, therefore it cannot be disproven.
I am not going to say that there isn't a God (as there is no evidence to prove or disprove his existence), but I will say that he did not create Adam and Eve: 6 million years of evolution created the first humans.
