How to Write Quickly?

I'm writing a script and a novel and I need to come with more realistic dialogue with the transitions of my characters and it was suggested to me that I should try writing down conversation I hear during my free time to come up with different dialogue and collinquism. I tried to do it last weekend but I couldn't write down what was going on quick enough. How could I do this again and be sucessfully at writing donwn a coversation?

Hear what they say, then quickly summarize it while the other person is talking.

Example: I am turning 26 in another three months or so.

Writing: turning 16 in 3 months.

There is something called short hand which is a way to significantly reduce the amount of writing. For example a whole sentence could be a few symbols. But it would take years to learn and master
