I will basically eat any of this stuff for lunch...
-whole wheat pita bread, carrot/celery sticks with hummus (roasted red pepper is great) or babaganush and maybe some chopped fruit
-salads are always great. You can experiment with different kinds. Tear up some lettuce leaves, add your favourite veggies (like tomatoes, green onions, peppers, etc.) and top it off with some dressing or vinaigrette. Or even try making a pasta salad. They can be quick and easy if you boil the pasta and make everything the night before and then just put some in a tub for the next day.
-My favourite lunch is usually quinoa. It's packed with protein. It takes about 20 minutes to cook (I usually boil it in vegetable broth instead of plain water and then fry up a variety of vegetables and beans, add some spices, and then mix it all together. Very tasty and simple.
-Couscous is like quinoa but takes only about 5 minutes to cook. Also has a more subtle flavor.
-Try making wrap. Sometimes I'll even make my quinoa dish, toast the tortilla in the oven to make it crispy, and then put them together. It takes amazing if you add some fresh chives, sour cream, and cheddar cheese.
-I love eating chick peas. They're super simple. Just open up a can, chop some onion, celery (or whatever else you like), sprinkle salt, pepper, & olive oil and viola! Easy lunch.
-Grilled cheese sandwiches. Put any type of cheese you like and fry for a few seconds in the pan. If you want, you can even add some spinach, tomato, or any type of vegetable to make it a bit healthier.
