haha I love your challenge questions. I think the automated system that suggested a category must've used the word "challenge" to suggest the category.
Hell... if there was a decent sized chunk of cook corned beef in my fridge... that wouldn't be scraping the bottom of the barrel, but since most of the time I'm cooking for one and only cook healthy meals, that's not likely to happen.
So... the dregs of the fridge. Things I often have in my fridge, reduced fat crumbled blue cheese, Trader Joe's reduced fat cheddar (the first and only good quality reduced fat cheddar I've ever found), and I generally have whole wheat spirals or elbows on the pantry shelves... I'd probably make mac & cheese. That can be a meal on it's own. There are always a few turkey burgers in the freezer... those are my standbys when I haven't shopped, or want something easy. That could go IN the the mac & cheese... or on the side.
Another thing I might make in a pinch might be a quiche of some sort with the cheeses, turkey bacon (that's usually there), onions and, of course, eggs & milk. I'd wing it with the spices. I'd make a pie shell, or make it crustless. I'd throw in some of the fresh basil from the garden.
Then of course there's always a bacon, egg and onion sandwich.
