There is a lot of debate on whether or not soy is actually bad for you! Just make sure your soy products are GMO free! That means that it was not genetically modified. (Yes, people are doing some crazy stuff to our food supply! Lets just keep it natural, can't we people??)
I LOVE Gardein's line of fake meats. They have tons of different kinds. Also Boca has some amazing chicken nuggets. 'Kind' is a brand of protein bar that is just nuts and dried fruits all stuck together, one kind has some dark chocolate thrown in there! Yum!
I love slicing up apples and spreading peanut butter on them, and apples with almond cheese is great! If you have a Whole Foods Market somewhere close to where you live, I would definitely take the time to go check out their vegetarian foods! I live 45mins from my closest Whole Foods, I go at least once a month to stalk up on all my staples! I try to eat a lot of raw foods too, like munching on iceberg lettuce (it doesn't have a lot of nutrients but I get the munchies a lot!), strawberries, cucumbers sliced up make a great crunchy snack, pickles, I love to eat frozen veggies as snacks all day long. especially in the summer. I try to eat a huge salad with every meal! Oatmeal is great, popcorn, vegetable soups, stir-fried vegetables, grilled veggies, cooked portabello mushrooms are delicious! beans of course! I don't know if you have a pinterest account, but there are tons of amazing vegetarian recipes on there!
I could go on forever! There are so many amazing foods out there! Good luck! I never really liked vegetables as a child, and becoming a vegetarian has helped me discover so many ways to cook up delicious recipes with veggies! Just google vegetarian recipes and have fun!
