    I think the first mention of an olive branch is when Noah sends out a dove from his ship to find out if there is any dry land yet, and it returns with an olive branch in its mouth.

    In later folklore the olive branch represents "peace." Note that on the Great Seal of the U.S., the eagle holds arrows in one talon and an olive branch in the other, but faces towards the olive branch (meaning that the country supposedly prefers peace to war but is ready for both).
