If you have a company you would have your employees sign an employment agreement about the ownership of work that you create and any trade secrets he is made aware of.
If you had an employee decide to run off with one of your ideas he could be sued for stealing the idea or trade secret. However, even if you were in the right and he was in the wrong you would have to prove the ideas were yours and were unique and this would certainly involve lawyers and lots of expense. The cost of getting the money that someone else made from your idea could cost you more than the money you lost.
So if you have a small business you have to have a lot of trust in your employees. I can tell you from experience that it is very possible that you will have employees steal your ideas, your clients and other assets. This is a real possibility that you have to defend against but it may happen. It is all part of the risk of doing business and bringing other people into your dream.
