I know that in the americas there's still a lot of wilderness. But I live in Europe and I wanna know one place in Europe where there is true wilderness, without human interference

Deep in the Scottish Highlands.
Large parts of Ukraine, Poland, Norway, Sweden, Ireland, Finland and Spain are very isolated, but i couldn't pin point where exactly. But generally the further inland you go, and the further North you go, the less civilisation you will find.

Bulgaria, Romania, Poland- huge forests. Part of Russia is definitely in Europe and don't forget Ukraine also. There are huge areas of Norway, Sweden and Finland also that are Arctic- frozen much of the year and unsettled. It is definitely there- if you look for it.
