Can you encrypt /boot on a Mac?
On Linux all paritions except for /boot can be encrypted. I'm assuming at the very least that the same holds true for Macs.
However I'm wondering can you also encrypt /boot on a Mac?

You could try using truecrypt to encrypt the entire drive. I have heard this can cause issues if you are duel booting though. The above poster trouble is also correct. OSX has a built in utility

Yes. You can encrypt your boot drive in Lion using FileVault 2 or Disk Utility.
