Upmarket restaurants add squid ink to make pasta black. Not sure about the nutritional value of that one though. Very popular for some reason.

You need things that can mold into the dough, Things like Spinach are good. Finely chopped onions, sun dried tomatoes, cheese, Goats cheese, Parsley, Zucchini, Grated peppers, Olives, diced mushrooms etc etc. The Vegeables have to be small to be molded into the dough and easily baked.

    Good luck!

Also consider herbs, pepper, basil, etc.

    Hope I helped!!
