Above all others my favorite point-n-click game has to be "The Dig" from Lucasarts. Just a really great story, I'm suprised it wasn't an animated movie, it's that well written. The cast may have only been a few people, but the voice acting was top notch. Not to mention gorgeous hand drawn visuals.
Other Classic PnC games I liked (Not including anything recent) in no particular order:
- Gabriel Knight 1 & 2
- Broken Sword 1 & 2
- The Secret of Monkey Island 1 & 2
- Day of the Tenticle
- Maniac Mansion
- Indiana Jones and the Fate of Atlantis
- The Pandora Directive
- The Longest Journey
- Simon the Sorcerer 1 & 2
- Full Throttle
- Grim Fandango
- Willy Beamish
- Leisure Suit Larry 5 - 7
- Space Quest 4 - 6
- Kings Quest 5 - 7
- Beneath a Steel Sky
- Black Mirror
- Quest for Glory 3 (I didn't like the others)
- Rex Nebular and the Cosmic Gender Bender
There are many others but these are the ones I remember the most.

I don't know about any older ones. But one great, newer, one is Sacred: Gold. Huge map, tons of enemies, good quests, cooperative LAN and Internet...just fantastic game overall. Can be found 10 bucks at Target.
Only downside to the game is you have no customization of your character :/ oh well.
