I have a Kia with the plus and minus on the gear shift. What is that used for?

It's there so you can manually select gears using the shifter if you want. Moving the lever towards "+" selects the next highest gear and moving it toward "-" selects the next lowest gear.

+ means you shift gears up.
- means you shift gears down.
D in automatic goes this for you automatically. But if you switch to M or S mode as it is usually called, you can choose when to shift gears instead of letting the automatic transmission do it for you. You can also blow up your engine if you don't know what you are doing. So just ignore it and keep driving on D.
