What's the recipe for Súrsaðir hrútspungar?

And please don't tell me 'The testicles of rams pressed in blocks, boiled and cured in lactic acid.'

I need steps since that's how my teacher wants it.

    Súrsaðir hrútspungar is a dish made from ram testicles. Icelandic lamb is highly appreciated, as it feeds on natural grass in the mountains. It is more like game meat.

    Rams testicles are pressed into blocks, boiled and cured in lactic acid. It is one of the traditional Þorramatur dishes, usually eaten in winter (January, February) as a tribute to the ancient people who lived in Iceland and prepared such kinds of meals.

    Ram's testicles are spongy in texture and sour in taste because of the acid. Ram testicles may be also prepared in gelatin, with garlic, as a jam or as pate.

    Ram’s Testicles in Honey Sauce with Sweet Potato Chips

    INGREDIENTS

    For 2 serving(s)

    4 ram's testicles, prepared

    10 ml mild chili powder

    2.5 ml cinnamon

    15 ml flower honey

    150 g butter

    1nice sweet potato

    oil

    salt

    METHOD

    Toss the ram’s testicles gently in salt without crushing them and rinse in fresh water.

    Rinse several times, then slice into strips and drain on paper towel.

    Meanwhile, peel the sweet potato and slice thinly – use a mandolin to save time.

    Heat the frying oil in a skillet and cook the sweet potato slices until crispy. Drain and place on paper towels. Salt and set aside.

    Melt the butter in a skillet and add the spices (paprika, cinnamon, cumin), stirring with a spatula to blend the ingredients well.

    Add the sliced ram’s testicles and cook for a few minutes before adding the honey. Cook over high heat for several minutes.

    Remove the ram’s testicles and keep hot.

    Make the sauce: reduce the cooking juices to form a sweet, slightly-thickened sauce.

    Serve the ram’s testicles with the sweet potato chips and spoon the sauce over top.

    1. Put ram testicles in square blocks.

    2. Pour skyr or mýsa on top (use whey or Greek yogurt if those are unavailable). Pour just enough on top to cover the testicles.

    3. Put a weight (heavy object) on top, so that the testicles will be square- shaped.

    4. Slide the blocks up to remove the hrútspungar from the blocks.

    5. Boil until soft BUT NOT Mushy.
