A mini prix can really be any height. I won a mini prix once that was only set at 3'. However if you go to A shows, their mini prixs are usually set at 4'- 4'3" and grand prixs are usually set at 1.60m which is roughly a 5'ish course (ranging from 5'-5'4 sometimes). Some larger and some smaller, it depends how the course designer wants it

A mini course could be as low as just a pole on the ground, usually no higher than 6 inches max. A grand prix course is with heights up to 5 feet 3 inches (1.6 meters) and spreads of up to 6.5 feet (2.0 m).
