John is a little confused. The "goodness" that you get out of steak is the protein in it, and there is no difference between MR and Well in terms of protein.
However, if there are bacteria in the steak, MR is not likely to kill them.
Furthermore, the longer you cook the steak, the more those artery-clogging fats will drip out of it.
And MR is harder to digest than Well
Iron content will be "sealed" into the meat .. you might actually have more Fe in steak that is cooked more, because less blood will drip out of it
As for carcinogens, that matters IF you are cooking over real charcoal. A gas flame will not give create carcinogens in food cooked over it.
But, for your purposes, just asking for Medium should do just fine ... Well is a bit of over-kill, and usually the meat turns out tough and pretty tasteless.
