Since there's so much food, and different kinds, I'll sort by Meat, side/starch, desert.
Kobe beef is delicious, though it can get pricey depending on where you are
Karage (fried chicken)
Fried Rice (technically not Japanese, but I believe there is a Japanese style)
Soba (hot, not cold)
Ice Cream Mochi
Taiyaki (fish shaped, anko stuffed grilled (closest thing to it is a pancake))
Okanomiyaki (kind of like a japanese omelet, but it's cabbage, meat, etc then top with egg and mixed)
If you're in Tokyo, there's a great place near the Shimo-Takaido station (Setagaya ward) that is known for its Taiyaki (and it's only 120yen, or roughly $1.50 per).
