Doing the night before is just fine. I like to cook up the whole package of bacon and then put in a zip lock bag and freeze it. That way I can take out whatever I need and just place between 2 sheets of paper towel and zap for 30 seconds. It will be perfect. Saves dragging out the skillet every time you want bacon.
Hope that helps.

You can definitely cook the night before. Place bacon on paper towel to drain grease and then once cooled completely lay bacon on clean paper towel spacing a few 1/4-inch apart, cover with another piece of paper. Repeat until all of your bacon is layered between paper towel and then cover with a final sheet of paper. Place in a ziploc bag and refrigerate.
