Barbecued Chicken on the Grill Recipe

Prep time: 5 minutesCook time: 1 hour, 45 minutes

Note that chicken thighs and legs will hold up better to long, slow heat than will breasts which can more easily dry out. If you barbecue breasts, keep them on the coolest part of the grill. This recipe assumes fairly large chicken pieces (like the main pieces from a 4 to 5 pound whole chicken). If you are working with smaller chicken pieces, they may require a shorter cooking time. If you are cooking wings, they too may be done before the other larger pieces. A note about the skin. Even if you do not plan on eating the chicken skin, it's best to barbecue it with it on. The skin will protect the chicken pieces from drying out.

    Chicken Shawarma Recipe Sandwich Recipe

2 boneless (skinless) chicken breasts, cut into thins strips

    1/4 cup lemon juice

    1/4 cup Mediterranean (Greek) yogurt

    1 tbs minced garlic

    1 tsp salt

    1/4 tsp ground cardamom

1/4 tsp seven spices (can be purchased at Dede's Store)

    1/4 tsp paprika

    1/4 tsp dried parsley

    1/8 tsp cayenne pepper

    1/8 tsp cinnamon

    3 tbs olive oil

Pita, kabees, pickles and garlic for sandwich.

Combine all ingredients in a large bowl, cover and let marinate for 2 hours in the refrigerator. Preheat pan and add 3 tbs olive oil, add chicken and let cook for 10 minutes until chicken browns, cook for an additional 2 minutes if necessary to brown. To make sandwich, use pita bread, spread garlic sauce on pita, add chicken, kabees and pickles (you can add tomatoes and lettuce if desired). Roll sandwich and press in the grill press to make sandwich crispy for 3 minutes. Enjoy with fries, pickles, garlic sauce and salad.

4 pounds of your favorite chicken parts (legs, thighs, wings, breasts), skin-on

    Vegetable oil

1 cup barbecue sauce, store-bought or homemade

1 Coat the chicken pieces with vegetable oil and sprinkle salt over them on all sides. Prepare your grill for high, direct heat. If you are using charcoal or wood, make sure there is a cool side to the grill where there are fewer coals.

2 Lay the chicken pieces skin side down on the hottest side of the grill in order to sear the skin side well. Grill for 5-10 minutes, depending on how hot the grill is (you do not want the chicken to burn). Once you have a good sear on one side, move the chicken pieces to the cooler side of the grill, or, if you are using a gas grill, lower the heat to medium low. Cover the grill and cook undisturbed for 20-30 minutes.

3 Turn the chicken pieces over and baste them with with your favorite barbecue sauce. Cover the grill again and allow to cook for another 30 minutes. Repeat, turning the chicken pieces over, basting them with sauce, covering, and cooking for another 30 minutes.

4 By now the chicken should be cooked through. You can check with a meat thermometer inserted into the thickest part of the chicken piece. Look for 165°F for breasts and 170°F for thighs. Or insert the tip of a knife into the middle of the thickest piece, the juices should run clear. If the chicken isn't done, turn the pieces over and continue to cook at a low temperature. If you want can finish with a sear on the hot side of the grill. To do this, put the pieces, skin side down, on the hot side of the grill. Allow them to sear and blacken slightly for a minute or two.

5 Paint with more barbecue sauce and serve.

    Yield: Serves 4-6.

    Chicken Pot Pie IX

    - Directions

    Preheat oven to 425 degrees F (220 degrees C.)

In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

  • Butter chicken

    Ingredients (serves 4)

    1kg chicken breast fillets

1 cup butter chicken curry paste (tomato and tamarind) (see note)

    2/3 cup thick natural yoghurt

    4 garlic cloves, crushed

2 tablespoons ghee (see note) or olive oil

    1 cinnamon stick

    425g can tomato puree

1 teaspoon Vegeta Chicken Stock Powder

    1/2 cup water

    1/3 cup thickened cream

4 green onions, sliced, to serve

    naan bread, to serve

Cut chicken into 3cm cubes and place into a ceramic bowl. Add 2/3 cup of curry paste, yoghurt and half the garlic. Stir to coat. Refrigerate for 1 hour, if time permits.

Heat ghee or oil in a large heavy-based saucepan over medium heat. Add remaining garlic and cinnamon stick. Cook, stirring, for 2 minutes, or until fragrant. Add remaining 1/3 cup curry paste, tomato puree, stock powder and water to saucepan. Bring to the boil over high heat. Reduce heat to medium-low. Simmer for 5 minutes.

Add chicken and curry paste mixture to saucepan. Simmer, stirring occasionally, for 10 minutes. Stir in cream. Cook for a further 5 minutes, or until chicken is cooked through. Remove cinnamon stick. Top with onions. Serve with naan bread.

Note 1: Look for butter chicken curry paste in the international section of your supermarket. Note 2: Ghee is clarified butter and is sold in a can near the curry pastes in your supermarket. Ghee can be heated to a much higher temperature than other oils without burning, making it perfect for Indian cuisine.

Chicken Marbella :) hope u like it

    2 chickens, 2 1/2 lbs each, quartered, bone-in, skin-on

1/2 head of garlic, peeled and finely puréed

    2 Tbsp dried oregano

Coarse salt and freshly ground pepper to taste

    1/4 cup red wine vinegar

    1/4 cup olive oil

    1/2 cup pitted prunes

8 large pitted Spanish green olives, cut in half

1/4 cup capers with a bit of juice

    3 bay leaves

    1/4 cup brown sugar

    1/2 cup white wine

2 Tbsp fresh Italian parsley, finely chopped

1 In a large bowl combine garlic, oregano, salt and pepper to taste, vinegar, olive oil, prunes, olives, capers with caper juice, and bay leaves. Add the chicken pieces and coat completely with the marinade. Cover and let marinate, refrigerated, several hours or overnight.

2 Preheat oven to 350°F. Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine around them.

3 Bake for 50 minutes to 1 hour, basting frequently with the pan juices. Chicken is done when thigh pieces, pricked with a fork at their thickest point, yield clear yellow juice (not pink).

4 With a slotted spoon, transfer chicken, prunes, olives, and capers to a serving platter. Add some of the pan juices and sprinkle generously with parsley or cilantro. Serve remaining juice in a gravy boat.

    Yield: Serves 5-8.
