Butterfly knives are NOT illegal in NY, but switchblades are. You can still buy them online though. I am a steady buyer on iOffer for my knives. This is the guy I buy from. Heres the links:

They are illegal, and if caught the charge is 'carrying a concealed deadly weapon', a felony. Do not do it unless you really like trouble.
