There are some good Spanish (yellow) rices, boxed with suggestions for serving.

Refried beans - also suggestions on can or bag if you're going the "long way)

Anything "mini" works. Follow reg recipe, but cut everything in half (enchiladas are easy)

What Americans consider the main dish, Spanish and Central and South Americans think of as "normal" when there are six different dishes. One of my faves is paella. Their "side dishes" can be very time-consuming, as well. Has a lot to do with feeding groups of 20 in a daily basis and lots of help!

You could make Mexican style rice by mixing some salsa with hot cooked rice. We like to use salsa verde with rice.
