Yes you can make jam from nectarines. The recipe will be a little different in terms of the amount of sugar and other ingredients than it would be if you were making raspberry or strawberry jam, but most of the pectin you buy will have recipes inside the package for all different types of fruit. Here is a link with more info: http://www.squidoo.com/raspberry-freezer-jam (it shows making raspberry jam, but the process will be very similar with nectarines.)

To peel nectarines easily, dip them into boiling water for a minute or so. The amount of time to keep them in the water will vary depending on the variety and how ripe they are, so just start with 30 seconds and increase the time in the water until the skin slips off easily.

You can make jam out of them, just like peaches. Warning-some nectarines are very high in water content. If the ones you have are, the jam will be very liquid. Be sure to peel them just like peaches.

A nectarine is cross between a peach and a plum. So check your books for addatives (lemon juice).
