Well, he really didn't need him anymore...he has Mike, and it was showing how unpredictable Gus can be. No one is valuable to him, only used for their purpose, until they have none. He's not above killing either of them himself if he has to, and like Jesse said, "If he can't kill us, he sure as sh!t will make sure we wish we were." Gus brought out his raw side for once, after all they ruined his plan. He knows he needs Walt and Jesse for now.
Edit: Oh and he was seen by witnesses....Gus doesn't take chances...
